Warm up your winter meals and hearts with a delicious and simple soup. There is nothing better for your health, too. Loaded with good ingredients this soup will make all the family happy.
Ingredients for 4 servings:
1 cup of Lentils
4 cups of water plus 1 boullion cube
1 small onion, chopped
1 celery stalk, chopped
1 carrot, chopped
1 garlic clove
8 large shrimps
4 slices of bacon
Extra virgin olive oil, salt,pepper to taste, paprika powder
In a medium saucepan or Dutch oven, heat the olive oil over medium heat. Add half of the onion, celery, carrot and stir to combine, then cover and let sautee. Add the lentils, stir and cover with the broth, adjust salt and pepper. Cook the lentils for 20 minutes until they begin to fall apart. Meanwhile, heat olive oil in a skillet and cook the shrimp with the other half of the onion stirring regularly, 1 minute on each side. Season with salt and pepper and remove the skillet from the heat. Let the shrimp finish cooking off the fire for a couple of minutes. Set aside. Prepare the bacon too. Lay some parchment paper on a cookie sheet and adjust the bacon slices on it. Bake in oven at 400 degrees F for about 15 minutes or until crunchy. Remove the lentils from heat, check salt and pepper, add some paprika.
Ladle the lentils into cups or bowls and serve, topped with grilled shrimp and crumbled bacon. As last touch, add a drizzle of fresh olive oil.
