Summertime and need of refreshing delicatessen. Here we are with a easy and really fresh dessert. Of course with a little of extra whipping cream! Without it is not a dessert!
Makes 4/6 servings
200 gr ( 7 oz) Plain Greek Yogurt
2 tbsp Sugar
180 ml Whipping Cream
1 Gelatin sheet ( tsp of gelatin powder)
For the sauce:
150 gr ( 5,3 oz) sugar
200 gr Mix of fresh Strawberries and Blueberries
1/2 lemon juice
a pinch of Cinnamon
Rum or Marsala wine( optional)
In a medium bowl mix sugar with yogurt.
In another bowl let the gelatin soften in cold water ( about 10 minutes). Squeeze the gelatine and add it to a tablespoon of whipping cream. Let it melt over medium heat.
Add the melted gelatin to the yogurt and mix very well.
Whip the cream and add it to the yogurt mixture slowly.
Pour the mixture in single cups or in a bigger container if you want to cut it in slices. Let it rest a little in the refrigerator, then put it in freezer for 20 minutes.
Meanwhile prepare the sauce:
Wash the fresh berries and put them in a medium pan with sugar, lemon juice, cinnamon and the optional liquor. Let them simmer for few minutes, until the fruit start to melt. We want the berries to maintain their consistency. Set a side and let them cool down.
Serve the dessert cutting one slice for each person and cover with two or three spoons of sauce.
