A salad seems an easy dish to prepare. Truth! But how many variations you can taste! How many ingredients you can use! Infinite and more, it's up to your fantasy. I'm bringing to you a mediterranean flavored salad. The fragrance and taste of this salad is about Italy and Mediterranean Sea. A salad that reminds me of home.
Makes 6 servings| 15 minutes
250 gr ( 8.8 oz) green mix salad
1 cup grape tomatoes, coarsely diced
1/2 tsp garlic, minced
1/2 cup feta cheese, crumbles
2 anchovies, cut in small pieces,
1/2 cup black olives, in pieces
1 cup yogurt dressing
For the Yogurt Dressing:
2 tbsp Greek plain Yogurt
4 tbsp Extra Virgin Olive Oil
2 tsp Honey
Salt, Pepper to taste
Few drops of Lemon Juice
Prepare the dressing.
In a little bowl mix all the ingredients and set a side.
In a big bowl mix the green salad with feta cheese, olives and anchovies chopped. In a separate bowl cut the grape tomatoes and mix it with garlic, a little of oil and salt. Let them rest for 10 minutes in the fridge.
Add the tomatoes to the salad. Add the yogurt dressing and mix well.
