Apples, just apples. Apple cake means a lot of different things. To me the real one is the one that melts in the mouth because is made practically just with apple. A little of flour and other ingredients but in a apple cake you need to taste apples. Like for many simple cakes you need to adjust recipes to find your own way to make it. I like it in this way: walnuts, raisins and Amaretti biscuit to enrich the flavor. A touch of Cognac to complete the mix. And it’s done. Serve with a scoop of vanilla ice cream.
Makes a 9 inches cake| 1h and 30 minutes
800 gr ( 28 ounces) apples, sliced. About 3 apples.
250 gr ( 8.8 oz) Flour
100 gr ( 3.5 oz) Sugar
70 gr ( 2.5 oz) Butter, melted
4 tbsp Raisins
6 tbsp Walnuts, chopped
0,5 dl Cognac
2 dl Milk
5 Amaretti biscuit
2 tbsp bread crumbs
1 lemon zest
2 tsp Baking Powder
1 tsp Vanilla Extract
2 tbsp Sugar Pearls
Heat the oven to 350 F degrees.
Soak the raisins in lukewarm water and a spoon of Cognac for 15 minutes.
Meanwhile grease a 9 inches springform pan and sprinkle with the bread crumbs. Peel and slice the apples.
In a big bowl mix yolks and sugar until soft. Add melted butter slowly. Add flour, baking powder, milk, remaining Cognac, lemon zest and vanilla extract. Mix well.
Pour half of the mixture in the spring pan.
Lay over half of the apples arranging them radially. Sprinkle half of raisins, squeezed, and half of walnuts. Cover with the remaining mixture. Make the final layer of apples carefully placing them in nice sequence. Finish with raisins, walnut and sugar pearls.
Bake for 55 / 60 minutes. Always check the cooking!
